Today I made a literal bucket of pasta salad so expect it to feature heavily over the next few days haha 😅
Ingredients.
Pasta. I used buckwheat as I was feeling adventurous….okay it was all I found in the cupboard that I think I purchased in an ill advised late night Ocado perusal 😒 you caught me.
Vegetation. I have tinned sweet corn 🌽, red and green peppers, spring onion, kimchi and kale (check me a my bougie leafy greens)
Sauce. I’ll let you work out the proportions…Plain yoghurt, garlic cholula, garlic, olive oil (just the tiniest bit), vinegar, salt and pepper

One of the simplest dishes and thus one of my fav go-to meals: kale massaged with sesame seed oil & sea salt, brown rice, oven baked tofu and fresh avo. Easy, filling, delicious.

Ingredients: . • 3 ripe avocados • 1.5 cup coconut water (about 355 ml) • 2 cloves garlic • 1/2 tsp black salt * (if you're using table salt, cut the amount by half) • 4 sprigs coriander🇬🇧/ cilantro 🇺🇸 • chili flakes for garnish and an extra kick, if needed. Instructions: 1. Cut each avocado in half. Using a sharp knife, slice through the avocado lengthwise until you can feel the knife hitting the pit. 2. Remove the pits and scoop out the avocado meat before transferring to a blender. 3. Add the rest of the ingredients: coconut water, garlic, salt, and coriander. 4. Blend until smooth. 5. Getting back to better foods to make me feel my best after 10+ days of road tripping and camping in the wilderness
🍏🍌🍇🍑So I have a day off today and plan to chill watching TV. I don’t know about you guys but when I veg out I don’t really pay attention to what or how much I’m eating so to ameliorate this I always prepare a plate of healthy nibbles that I can pick at. The pest thing I find is some kind of fruit as you get lots of flavour and goodness. 😍😍😍👌🍌🍏🍇🍑
Oh you know just the usual “throw fridge contents into a bowl and try to make it look pretty” for lunch today haha… Garlic roasted sweet potatoes, potatoes, quinoa black bean salad, vegan cheesy spiral used zucchini, broccoli, sprouts, sauerkraut and peanut satay sauce, happy fridayyyy! 😜

Things we can do to diminish our harmful impact on the environment today and everyday: minimize our use of plastic and creation of waste, recycle, carpool, avoid palm oil… Oh, and go vegan.
