I don’t know Star Trek too well but from a skim on Memory Alpha they seem to have an organic element so I guess they would die but if their hive mind can live in computers like AI and lie dormant until new life pops up for them to assimilate - and then I guess they would be so technologically superior to everyone they would totally dominate and win the galaxy. GAME OVER.
