My dear Cheshire got me into the Moomins a few years back, primarily the comics and what I could read of the books (I still need to get my hands on a physical copy of them, dangit cost of living! -shakes fist-).
Anyway, Snufkin is extremely relatable to me and basically lives the life I dream about living so after finally deciding to binge watch all I could of them I decided to see if there were any recipes for the soups and stews he makes in the show. And tada! There is!
It’s the most Finnish recipe I’ve ever cooked but it came out pretty damn bomb with some tweaking, if I do say so myself.
I figured others might like it too, since he’s become so popular here, so here’s my version of it:
6 carrots 1 large onion 2 tbsp oil 3 cups water 1 vegetable broth cube 3 tablespoons of wild rice 1 cup of heavy cream
Salt and pepper to taste.
Pinch of thyme for each bowl.
1. Peel and slice the vegetables, stir them together with oil in a large sauce pan over high heat. I left my carrots in big chunks because I’m a New Englander and that’s how I like my potatoes in chowder but if you do that I recommend cooking them for about five to ten minutes with a cover over them all on their own before adding the onions because they came out a bit tough in the center for me. Cook, stirring consistently, until onions are golden and slightly transparent. 1.5. While veggies are cooking, bring water to a boil in a medium to large pot.
You know you have the right sized onion if it’s roughly the size of Little My’s head.
2. When water is boiling and veggies are mostly cooked, add vegetable broth cube to the water. Stir broth, add vegetables to the pot once they’re ready (careful of splash back!).
3. Now add the rice, stirring continuously, for around 30 minutes or more depending on the rice you used. Mine took about 40 minutes because I added wild rice to mine instead of white or brown.
4. Bring to a gentle simmer and add the cream. Stir continuously over low heat, remove from heat when it reaches desired thickness.
5. Serve in your favorite bowl with a pinch of salt, pepper and thyme to taste! You can also try green onion or a similar veggie/spice of your liking but I think the thyme is the perfect addition to not overwhelm things. <3
6. Share a bowl with your favorite Moomin! It is a Snufkin soup after all!
And there ya go! :D A delicious dish, straight from Moomin Valley! (or the farmer’s market/Stop ‘n Shop, whichever is closest. ;3)
