I was on a fuckin' brain overload, the stag is a metaphor for the sacrifices Harry's parents made (to survive voldy ykyk) and by eating it, he feels as if he's finally lost hope -- it's all gone to waste, he has ultimately dissapointed his parents. The world ends with him.
