I'd like to get into larger street art (so like painted graffiti not just quick pen tags and stickers). How do I do this without being caught? And what sort of paint dyou use?
There are legal walls all around the world! (But especially in Europe) Take a look here: https://www.legal-walls.net. Be aware that your graffiti can be covered up by anyone like within a week but its actually great for practicing.
As for the colors I always use the colors from my artsy friends, they've got me into spraying aswell!! She uses NBQ spray paint and for the background, to cover up older graffiti we buy wall paint, any is fine really! Let is dry some minutes before spraying on top.
If it is possible find yourself some sprayer friends than you can share your colors and they may know some good spots in your area.
As for if there is really no legal wall anywhere close to you, look out for places that rarely people go by, better if no streets are around as well. Pedestrians may see you but in my experience they never bother you and when they do they likely compliment your art!

The Hocotate freight ship made out of wood and acrylic paint. The wood base was a present from my little brother, he carved it himself. I painted the ship over several days.
