Servings: 20 rolls - 129 kcal/5g protein each roll
1 tablespoon of olive oil
1 cup of zucchini, grated
1 cup of carrot, grated
1/2 cup of baby portabella mushrooms, minced
1 cup of frozen chopped spinach, thawed and squeezed dry
1 1/4 cup of small curd cottage cheese
1/2 teaspoon garlic powder
1/2 teaspoon of dried basil
salt & pepper
2 cups of marina sauce
20 lasagna noodles
3/4 cup of mozzarella cheese
1. Preheat oven to 350.
2. In a large saute pan, add olive oil and mushrooms. Saute for 2-3 minutes.
3. Next, to the same pan, add carrots and zucchini. Saute for another 2-3 minutes.
4. Remove from heat and let rest for 5 minutes.
5. In the meantime, bring a large pot of water to a boil and cook lasagna noodles till al dente {written on box}. Spray a baking sheet with cooking spray so noodles do not stick. Remove noodles and place on baking sheet until cool enough to touch.
6. In a small bowl, add sauteed vegetables, spinach, cottage cheese, garlic powder, dried basil, and salt & pepper to taste. MIx until combined.
7. In a 13×9 inch pan add 1 cup of marinara sauce to the bottom.
8. Start to assemble lasagna rolls. Place lasagna noodle on a flat surface. Add about 1-2 tablespoons of the filling mixture to the noodle and spread out even.
9. Roll from one end to the other and place rolls in pan.
10. Finish off with 1 cup of marinara sauce on top of finished noodles.
11. Place 1 tablespoon shredded mozzarella cheese on each lasagna roll.
12. Cover with foil.
13. Bake for 40 minutes.
14. Devour!
NOTE: 20 rolls will make about 2 13×9 full pans. If you do not need the full amount right away you can freeze the rolls individually in a ziplock bag for up to 3-4 weeks or freeze the fully prepared lasagna rolls with sauce for 3-4 weeks.
Food Log: 9/14
Hey everyone! I’ve let myself go a lot over the summer from being in IOP but now I’m motivated to get back to my lw, or maybe even my ugw :) So, I’m gonna start tracking my food each day and upload it here, as well as do some fasting
Sugar-free Gum (5 cal)
Black Coffee (15 cal)
20 cals
skipped
Tilapia Fish (218 cal)
Broccoli (31 cal)
Cauliflower Rice (35 cal)
284 cals
would today technically be an OMAD? Or does black coffee break a fast idk😭 I was aiming for a fast today but lmk if I made any errors here
use half a cup of oats, lotsa splenda, a pinch baking soda and 1/8 tsp white vinegar w one cup of water in a decently big bowl
microwave 3 minutes
refrigerate for 30 minutes
add 1/8 cup more water, stir
microwave another 3 minutes
refrigerate for 30
repeat process until you have as much oat volume as u want with thick consistency! Basically this makes the oats expand to hold more water every time you cook them so it looks and feels like wayyy more than it is
when you feel a craving coming on:
drink a glass or two of water, slowly
have a piece of fruit, like an apple
make some warm herbal tea with natural sweetener
go for a long walk or hike, put your earphones in and clear your head - walk with a friend if you’d prefer
if you’re still craving the food, have the tiniest bit of it, no more than a bite, and have another glass of water
distractions:
watch a long movie or start a new show
study! complete homework or begin revising for exams
write down your own thinspo imagines
do some online window shopping and look at all the outfits you want to wear at a smaller size
make your own thinspo playlist
do some yoga or meditation
things to keep in mind:
you already know what your favourite foods taste like - you don’t need to eat them again in bulk
imagine the amount of progress you’ll make tomorrow if you exercise self control right now
the shame and guilt that follows a binge is not worth it
the physical pain and exhaustion is not worth it
you’re not just affecting your weight, you’re affecting your overall health, your mental well-being, your skin
binging means you’re wasting your time when you could be doing something much more productive
stop sleeping on baby snacks!!!!! it sounds weird, but gerber cereal puffs and yogurt melts are super low cal and delicious. apart from fruits and vegetables, these are my go-to when i need a snack or on a low calorie day. i'm surprised this isn't already a thing within the ed community because it's a lifesaver.
this whole plate is 130 calories including butter, whipped cream, strawberries and syrup
the pancakes alone are 70 calories for two decent size ones but you could probably make 3 medium ones

My guilty pleasure. Fiber One has always had good stuff, and it’s definitely been effective in getting the bowels moving. 🤷🏻♀️ Haven’t tried the other flavors yet but this one is pretty good. 70 calories, 5g carbs, 3g fat. It’s lightly sweet and makes a good choose for a snack if need be.

☕️ autumn safe food ideas
- tall sugarfree almond milk cinnamon dolce cappuccino from Starbucks is only 60 - 70kcal, dairy free (no zits! No bloating), spiced like all my favourite fall treats and cozy warm for those brisk mornings
- 6” veggie delux sandwich on 9 grain wheat bread from Subway, toasted with no cheese, all the good veg, and topped with sweet onion + yellow mustard is delicious, savoury, filling and only 250kcal
- cinnamon raisin bagel with a little butter and an additional sprinkle of nutmeg or cinnamon on top; approximately 250kcal (depending on where you get the bagel)
- sliced apple with cinnamon sprinkle on top is a fantastic crunchy mid day treat that always fills my stomach and settles sweets cravings for no more than 60kcal ✨ you can also heat this up in the microwave or in the oven (if you have time!) for an apple pie filling sorta deal - just add a bit of water or lemon juice and a teaspoon of sugar!
I could have the coffee with the bagel for breakfast, the apple sometime around lunch and the sandwich for dinner and stay under 650kcal for the entire day 🤟🏻🍂☕️
