Stinging Nettle Soup Recipe

Soup time! Soup time! As the cold weather continues to settle in, it's time for more soup recipes! Check out my linked post above for safety information on harvesting stinging nettle.

Ingredients:

3 TBSP butter

1 large sweet onion, chopped

1/2 cup uncooked rice (any rice will work, but wild rice works exceptionally great)

Multiple large handfuls of stinging nettle tops

3-4 cloves chopped garlic

8 cups chicken brother (low sodium)

1 TSP kosher salt

1/2 TSP ground black pepper

3-4 medium sized potatoes, peeled and diced

3-4 medium sized carrots, peeled and chopped

Instructions:

(If harvesting nettles): Take only the top 4-6 inches of plants, remove the leaves. Rinse and pat dry

Begin cooking your rice

In a separate soup pot, melt the butter, add your onion and garlic, then simmer until translucent (caramelize for extra flavor)!

Add your chicken broth and nettle leaves to the onion and garlic mix, then simmer for about 20 minutes. Use immersion blender if needed, and blend until smooth

Add potatoes, let cook for roughly a 1-2 hours (check veggie softness to make sure it's ready) while your rice cooks in the fridge

Once your rice has completely cooled, add to the soup along with your salt and pepper, then allow it to cook for another few minutes
