I made this amazinggg dish for dinner and it’s super yummy, easy to make, and low in calories. The basic version of a shakshouka is an egg poached in tomato, usually with spices, veggies and sometimes cheese. This is a really great recipe because you can change it up and put whatever veggies and spices you want in it or maybe put meat in it if you want. Theoretically you could do it with just the tomatoes and the egg if you wanted to, maybe throw in some spices, but this is how I did mine:
Ingredients:
100g Bell Peppers (any colours) ~ 29 cals
70g Onion ~ 29 cals
½ tsp Minced Garlic ~ 3 cals
200g Tinned Tomatoes ~ 45 cals
1 tsp Tomato Purée ~ 8 cals
Medium Egg ~ 66 cals
Ground Cumin
Ground Coriander
Chilli flakes
(Smoked) Paprika
Salt and Pepper to season
Optional - 30g feta cheese crumbled on top (76)
I didn’t count the calories the spices, and I put the feta as optional because I personally don’t use it but I know that it’s a very common ingredient.
Method:
Fry the peppers, onion and garlic in a pan (I used a spray of the 1 cal cooking spray and a very nonstick pan) until they are softened.
Add the tomato purée, tomatoes and spices, mix it all up, and leave to simmer for a couple of minutes just to get a bit of the water out from the tinned tomatoes.
Make a well in the middle and crack the egg, add your salt and pepper to season, and then put a lid on the pan to allow the egg to cook.
It was a pretty hefty portion, and I was very happy with it. The whole dish came to 180 cal, if you chose to use the feta then it would be 259 cal. I absolutely loved it.
I didn’t take a picture of mine because I kinda messed it up and getting out of the pan but I’ve found a picture online so you can see what it sorta looked like.
